Was at the butcher and there acquired 2 bone in, pork chops that were huge. In structure they were like a porterhouse steak with a tenderloin on one side of the T bone and a strip steak on the other. There is a name for this chop but it escapes me.

I have big hands in comparison, and they were cut thick, over 2".

Decided on low and slow cook, 250* to an IT of 145. Rubbed them with my standard pork rub.

Placed them in "Ole Fast Eddy" along with 2 sweet potatoes and gave them some smoke and heat..

Hit them with a little Stubbs to finish them off.

Cooked up some green beans and dinner was served.

It's a loin chop that cut from the center area of the whole loin.

AKA - Center loin chop, center-cut loin chop, loin pork chop, pork loin end chop, porterhouse, top-loin chop

Looks awesome. I seldom eat chops, and always wonder why when someone posts pics of them.

Yes! Aluminum Nails. .... Hoping they would finish on time with the chops. .... if not .... The Microwave!

On the way home from the meeting last night my friend comment he could no longer get pork chops big enough to stuff...he needs yours!

What non-meat things could you stuff them with? I like apples with pork. Could you make an apple stuffing, maybe some raisins, maybe use cornbread? Maybe that sound horrid -- I just like those ingredients and wonder if they would work? I think the hazelnut crust would work well with that combo.

Is there a sausage stuffing used with Turkey? Maybe reverse that...ground turkey with sage and sautéed celery & mushrooms...Ehh, muhh...as Newman used to say...

Forgot about peaches, perfect with pork. And I bet mango would be good too. Maybe a mango chutney.
