The 4 racks on the bottom I placed meat side down 2 right on top of each other,  the rack on top I staggered an put meat side up.  I put it meat side up because it was sticking above the side of the pan a little and I did not want the bones pocking holes in my foil.   I put my usual honey, parkay, and brown sugar on them.

My brother does something similar.  He then dunks the ribs in the juice and rotates throughout the time in the pan.
