Last piece of meat in the freezer cook

I'm sure there's been many times that you had one more piece of meat left in the freezer and decided to smoke it even though it wouldn't necessarily be something you would smoke. (Warning right out of the shoot…I had to hurry and I have no pictures.) But I smoked a chuck roast the other day that we would usually cook traditionally in the oven with potatoes, onions, and onion soup mix. But it turned out really good in the smoker. It had been in the freezer for a year and three months. After I thawed it by running water over the bag, I added Montreal steak seasoning and let it sit and dry brine for an hour. I threw it in the smoker (PG500) at 225° and let it smoke for five hours. I then wrapped it in foil with some beer and cooked it for another hour. It really turned out well. Final temp was between 180 and 190 and I let it rest for 45 mins. Just a word to the wise that the last piece of meat in the freezer might be really good smoked.

Chuck roast for pulled beef is one of my favorite cooks.

I started out with the Pepper Stout Beef recipe that someone had posted on Pelletheads.  I've been skipping the peppers and onions lately as I found they get too soft for me.  Sometimes, I throw them in late in the cook.  I also substitute the Guinness for any beer I have sitting in the fridge that is old that is a lager, stout, porter, or pepper related beer.  Many ways to make some good pulled beef that are quite tasty.

I've heard you guys mention pulling the beef. I enjoyed it sliced.

So the texture is more like a roast?  No pink, but still able to carve, not fork tender like pot roast?
