Pulled Beef on the Elite

15# of chuck roast put on the Elite set to 275°...used two different McCormick's rubs - Brazil and some KCBS beef rub




Smoked for 3.5 hours with Camp Chef cherry pellets...IT was 160°-170° on all 4 of them.  Put in a pan with 5 beers and covered.  Put in oven at 350°


3.5-4.0 hours in the oven and it was falling apart...pulled with two forks in less than 5 minutes

Winn Dixie had their choice boneless chuck roast on sale for $2.99 a pound.  We will be doing this in the near future.  Did you do enough beer to completely cover the meat?

I put enough beer in the pan to cover the beef before covering and continuing cooking until it falls apart.
