Did you slice thin for sandwiches or thicker for steaks for those few vac sealed bags of leftovers?

Posting a few weeks late and not on a pellet cooker, here's my Wagyu prime rib I cooked on my Kamado Joe.  It was perfect!

This year, I cooked mine at 275 before the 500 degree sear to achieve a little extra gray (which I've been enjoying lately).  Cooked to an IT of 120, rested for 45 minutes, then a 10-minute sear.

For some reason, the camera never quite captures the actual color of the cooked meat.

The marbling looks great from what I can see.  Did you notice a big difference in taste from the Wagyu.  Always wanted to try one.

I ordered it from Snake River Farms and it was, without a doubt, the best prime rib I've ever eaten.  I won't normally spend that much on a roast, but for a once a year treat, it was definitely worth it.
