Cured Smoked uncooked ham
« on: November 13, 2017, 11:39:54 PM »

I purchased a cured smoked aged ham via Plantation Peanuts in VA.  It was delivered today and I noticed two spots of mold.
Is this common on cured ham, and if so what do I do about it. Or do I just send it back.

I planned to soak it for s day and cook it on my pellet smoker. It is a touch over 16lbs.
I will try to upload a picture.

Thanks,
Bill

It's been a lot of years, but I remember my Mom just soaking it and then scrubbing the outside clean.  Maybe someone with a more recent memory can share.  Have you called the producer and asked?

Just scrub the outside to get the mold off. Having family in eastern NC I have had my share of cured ham  :lick:

I got a catalog from Smithfeilds the other day and it said that there is often mold on the country hams (cured) and its harmless like mold on cheese, didn't say anything about what to do about it.

1. You are so lucky.
2. Yes.
3. You do not have to, maybe an hour.  If it were mine I just wash it off.  Why would you want to soak away that wonderful flavor!

If it is a true salt cured, Country Ham, you do not want to cook it like a Wal-Mart ham.  It is menat to have a steak carved off, fried in skillet, have red-eye gravy made for the grits and served with 6 fried eggs over easy!

when I started working where I do now about 23 years ago this is what the company gave out for Christmas, the guys there had no idea what to do with them and there was one in the bottom of the fridge from the year before. I made out well that first year I think I had 4 of them. the next year they started giving out Butterball checks for 20 bucks. I enjoyed those hams.

Specifically 6? ;D I’m hoping the eggs are fried in pork fat.

It’s posts like this that keeps me from checking the site until after dinner. I’d over eat every day!
Ham, grits,N eggs. Wonderful for any meal.

Thanks all folks. I will try to do you all proud with this cook.

I will provide some pictures. I will also be doing two smaller turkeys (10 pounders)

They will go into the brine on Wed and I will do all three on Thursday in the AM.

Thanks! :)
