You and me both.  Unless there is a demand, they simply will not bring it in, and they do not know the cut in Fredericksburg!

I have finally found a butcher shop that carries Tri-rip for 6.29/#. Tried the brisket the other day and the burnt ends turned out amazing (so says the wife and that makes it official). Now for the bacon.

I'm not real smart about tri-tip.  When I see it advertised, it's either tri-tip steak (less than ½ lb.) or tri-tip roast (about 1½ lb.).  If you were buying, which would you prefer?

I buy both regularly and cook each differently.

I do the roasts in my smoker until they get to an internal temp of about 120 to 150 and I think reverse sear them on my PK Grill.  For the steaks I sous vide them for 5 or 6 hours and then reverse sear them on the PK.

I could mix things up and do the roasts on the sous vide and the steaks on the smoker, but I am often a creature of habit and that is how I've been doing it for a few years now.  :-)

Roast, and untrimmed.  Now if I were in Fresno, I could walk into any place that sells beef and get an untrimmed, 3-4lb roast.  Here in Mayberry, even Mt Pilot, cant fine it at any weight!

I buy the roast. If I'm spending $$ on steak I just think there are better options for me to purchase, especially since our family doesn't eat much steak, so when we do the requested cut is not tri-tip. And the roasts turn out so fantastic consistently, so there are no complaints.

I think it’s odd that different Costco’s around me offer tritip differently. Some only do steaks, others only do roasts.

This was only Choice at Costco, but looked pretty good!  I have to admit, I love prime tri tip at costo!!!

Our local Cash and Carry does that but since our local Costco always has Tri-tips available I never see the need to buy that much as once.  I only have so much freezer space.

We did not know there was one in Charlottesville, and Kristin wants to check out where this service puppy HQ is so gonna see if it has Tri-tip or Belly or Prime Brisket tomorrow.  I am told you can sous vide a hunk of brisket, make it tender and it still have pink it it...and yes, I have to see that before I believe it!

Our Costco in Midlothian carries prime brisket-was $ 2.99 now up to $ 3.29.  Always carries pork belly but I can't recall the price.  I checked yesterday and did not see any tri-tip and I don't think they have ever had it.
