How long to get to 125°?


3.5 hours. I set it out on the counter 3.5 hours before the cook. IT was 56*. I planned longer, but I was sidetracked because  we received our first snow that morning and I was out moving it.

Thanks. It came out nice and tender throughout. I'm having leftovers for Christmas dinner tonight. There ended up only being two of us eating off of it.

On for 2 Hours so far, set at 215, IT at 70.

I have never tired of seeing prime rib photos, even upside down ones!  Nice.
