What Are You Doing/Cooking for New Year's Day?

Of course, the MOST important thing about New Year's Day is college football.  The second most important thing is the food served to watch games all day.  We have finally settled into a routine that we have followed for several years -- the finger food extravaganza!!!

We make a bunch of finger foods -- some homemade, some store bought (the Costco long crispy shrimp that you cook in an oven or on the grill are out of this world!)  It tends to be an "international" kind of day -- the Costco shrimp, bao, mini-quiche, my overloaded nachos, maybe some Aussie sausage rolls.  We usually roll out a new food every hour from 1 pm until no one wants anymore.  Family can come and go as they please.  It works well for us on New Year's Day.

Sounds like fun.  The last two years I had 50+ people at my house with tons of food in steam tables in the garage buffet style for people to eat whenever they wanted.  Decided not to do that this year due to having to work the next day.  Moving that big party to St Pats Day this year to watch NCAA basketball tournament.

My wife and kids are thinking finger foods etc. wings, shrimp and they also are looking for fondue recipes which kind of sounds fun.

Oh, wings sound good.  But they are so expensive back here.  $2.50 per pound.  I can get chicken breasts for cheaper than that!!!

I would pass up the wings and go with the chicken breasts.  I would pound them out, cut into strips bread them and saute them.  then I would slice them into bite size pieces and serve with a sauce.  I like the Korean sweet sauce you can buy in the stores.

I'm planning on watching football all day as well. The food from the smoker will be meatballs for subs, wings, and bacon bites.  :lick:

Care to share the wing technique (look really good) as well as the bacon bites? I'm thinking not enough time to get any bellies but might be worth a go.

I did some meatballs Sunday for mini subs. I just made them smaller in size and cut them in half.

I think we are going to smoke up some wings.  Going to keep it pretty simple for New Years got the last Christmas to cook for on the 6th.

We are fans of meatballs but they have never come out right, ever.
Most of them were cannonballs, fewer were greasy balls of yuck.
Last year we bought lamb, veal, beef and pork, the recipe was supposed to be at the pinnacle of meatball recipes, uh, not so much.
Flat gave up on them, like em plenty but we hung up our saddles on this one.

1. 25 party wings
2. 1/2 Cup Hot Sauce (I use Texas Pete - NC favorite)
3. 16 oz Zesty Italian dressing
4. 1/2 Cup Worcestershire Sauce
5. 1/2 Cup Soy Sauce

1. Mix ingredients and marinate for at least 3 hours. I try to marinate overnight.
2. Drain wings and pat dry
3. Apply your favorite rub to both sides of wings
4. Smoke at 275 degrees until wings reach 165 degrees.
5. Wings take about 1 - 1/5 hours. Could take up to 2 hours if you use large wings.

Super easy bacon bites

1. Cut a pork belly into 1" strips
2. Remove skin from strips (optional)
3. Soak strips in water for 3 hours to remove salt. This is optional but I like it this way.
4. Rinse strips and pat dry
5. Apply mustard for binder
6. Apply your favorite rub to all sides of strips
7. Smoke @ 285 - 300 depending on your preference until internal temp reaches 200 degrees
8. Apply bbq sauce and cook for another 10 - 15 mins so sauce can set
9. Cut into cubes
10. Enjoy!

If you don't remove the skin you can put in oven on broil or on a grill to crispy up the skin.

Meatball recipe
1. 1 pound sausage. I use Neese Sausage (NC favorite). Can use Italian Sausage
2. 1 pound 80/20 Ground beef/chuck
3. 2 eggs
4. 1 cup Italian bread crumbs
5. 1/2 cup grated Parmesan cheese
6. 2 tsp Italian seasons
7. 1 tsp granulated garlic. I used garlic salt as it was what I had in my cabinet.
8. Mix ingredients and make into meatballs. Size them as you see fit.
9. Smoke @ 275 degrees until internal temp reaches 165.
10. Cook time take about 35 - 45 minutes.

I have a local Italian restaurant where I get my sauce. I place the meatballs in the marinara sauce and let simmer for about 30 mins or until ready.

I've never seen Neece, but is it a breakfast sausage?
Big fans of Italian sausage also, if I tell my wife I want to try again I am likely to get punched.
Smaller towns are great but they limit all the hot spots, specialty stores so the sauce won't happen here.
I am going to try the wings I think.
I figured the bacon bites were from belly so this time they are out.
