I was reading about Bentley’s scotch eggs so I thought I would share a tip. I’ve struggled for years with peeling hard boiled eggs and have tried all kinds of tricks but this technique is fantastic, eggs peel super easy every time and are tender not rubbery. Steam for 12 minutes, get the water boiling then put the eggs on and start timing. The yolks will be a tiny bit underdone on some, so go 13 minutes if that’s an issue. Run cold water over them to cool and crack the shells in several places while they cool .
