What is your Super Bowl cook

What are your Super Bowl appetizers and meals this year from the pellet smoker. So far I am undecided but I am leaning toward baby back’s

pretty simple stuff.   My buddy with a GMG will be doing pork belly burnt ends.  I'll be doing pork ribs (both sauced and just dry rub)  and boneless/skinless marinaded chicken thighs.  Only 8 of us total, so not too elaborate.     Veggies and ranch, chips and salsa, a side salad.

Standard fried Boston style chicken wings with my magic sauce.  Sides to include decent blue cheese sauce, chips etc pickles.  Simple.

Ohh Salsa and Tostitos!

Beer and stuff.  Stuff is what makes the You Tube vids.

Wife and I are doing a anti stupidbowl bash.
Pulled pork, SL ribs, ABT's, stuffed shrooms, and pork shots.

Won't watch it.

Is he smoking the pork belly whole & then cubing, adding sauce, rub in a foil pan or is he cubing right away when it is raw into a pan . I have always wanted to do this. Sounds like a good menu.

I've got to get him to log in here.   Member but lurker.  I've tried this twice and failed.   It is a higher heat cook which is probably my mistake.  All done on the pellet smoker.

Cubing first, rub and cook away, then sauce.  But need him to give the details as his results are far superior to mine.

Brined and smoked chicken wings with a couple different rubs.  One spicy and one mild.

Thanks, I can experiment as well when I get around to picking up a pork belly
I have done the pork belly burnt ends. I did them cubed up first but would do the whole belly next time. Rub with your favorite pork rub.  Cook it at 275 until 195 IT. Pull it off and cube . Put cubes in foil pan and toss in bbq sauce with additional rub, and honey. Put it back on cooker for 1 additional hour for sauce to caramelize.

texasbrew, how much of the fat on a belly would we expect to see render for the duration of a cook like this? I'm guessing there would be quite a bit of shrinkage?

I used the pork belly with the skin removed that they sell at Costco.  The fat render was similar to brisket burnt ends.  The cook time for the belly is not as long as a brisket point as the piece of meat is not as thick.

I don't call them 'burnt ends' , but  I have done some cubed bacon , smoked up to something close to 190F internal temperature, with some sort of sweet sauce on them as sort of a glaze...  Bacon Cubes I think is the term I'll use for them...


  I've gotten pretty good a making some wings on pellet grill... at least my wife, daughter, and myself all like them.   Basically I use my own modified version of Memphis dust, basically I substitute some Chipitole powder for at least half the paprika that's in the Memphis dust recipe.  This gives it a little kick, but not super hot either ( depending on how much of the Chiptole powder is used ).  I cook at like 325F for a hour in my pellet grill ( until internal temp is at least 175F or so ).  So, I'm sure wings will be on my snack table...

I thought there was some new style I wasnt aware of. Buffalo are always good though.
