Pork Shoulder Picnic/pernil

Went to Stew Leonard's and picked up a shoulder. Thought it was a butt. Went home to discover it's a picnic. It's been on since 9am and looks about ready. temp on food probe reads 196.  Took a couple of small chunks to test.  Divine.

If the probe goes it like it's soft butter you are good to go. if not cook it a little longer until it does.  :2cents:

Okay the probe poked through to the other side when lid hit the probe. Was wondering how it got to temp so fast.

Yup did the probe test and it was still very tough. Then realized why temps were so high so fast. Closed the lid on  the probe and it poked through.  High temps due to error.  It's going to be a while.

That doesn't look like a picnic shoulder to me.  I don't see a big fat cap nor a narrower end to it.

Not whole picnic. Think the they cut it in half. Had the skin on and fat underneath.   Was looking for something smaller to cook.

I have always felt they taste better because of the fat and it seems more connective then the butt, not sure if that is true or not.  But there is just so much loss if the fat and skin has not been removed it is sometimes hard to deal with.

This is my sandwich.  Chopped pork with caramelized onions and butter sauteed spinach with a chimichurri spread

Looks pretty, but I can't say I would eat it as I would skip the spinach.  Nice job though.

Thanks. Fortunately my wife loves spinach.  Isn't my first choice but it'll do.

So what was the final temp when it was probe-tender? Did you have to chop some of it or did it pull OK?

Thanks for the nice comments. Sandwich was delicious. But it needed to be chopped. It Didnt want to be pulled and it needed to get eaten.
