Wonderful Day

Woke up this morning, made my daughter breakfast and lunch then took her to school.  The last 5 Hours was spent deep cleaning the MAK then dinner prep for the next 4 nights.  Costco Prime Tri-Tip ready, Costco Filet ready, Costco Prime Ribeye ready, Pork Butt ready, Potatoes, corn on the cob and bread all ready to go.  I get the next 5 nights with my kids and I am going to feed them like Kings.

Those ribeye caps are awesome. Haven't seen them in awhile at my Costco. Definitely sounds like a good day to me.

First time I have ever seen the caps, they look amazing.  Tri-tip tonight and then steaks tomorrow.  Daughters choice on the tip, I was hoping she would have picked steaks, just for those Rib-eye’s.

I'm sure you will see them, but the caps usually have a string running around the perimeter. Don't forget to snip them off after cooking.

That’s funny, I did see them today when applying the rub.  Glad you said something because I was wondering if I left them on when I cook them.  Didn’t want to ask and look stupid.

Not my pick. Just pulled off google. That muscle that the arrow is pointing to identifies the cap. They cut along that seam you see in the picture for a flat piece of meat about an inch or a little more thick. They roll that up and tie it together to create the cap "steaks".



That muscle was always saved for last when I was growing up. It was always so melt in your mouth tender. I had no idea until years later that this cap steak was a thing.

Yes, leave them on when cooking. At least I do. Otherwise, they will most likely unravel while cooking,  and be very uneven doneness.

I saw those (prime as well) in the Costco I visit here in NJ, thought about picking up a pack but did not know how they are prepared.  Do you cook them like a ribeye steak, or more slow cooked like a short rib?

Just like a steak. They are usually pretty thick so a good candidate for reverse sear, or other similar method.
