Dukes peach BBQ snack sticks

Anyone had these, or more importantly tried to copy them?


Picked them up at rural king on a whim. Typically disappointed when I buy snack sticks as they all pretty much taste the same. I was very impressed with these. The subtle fruit flavor broke up the usual boring salt/hot flavor.

I came up with a recipe I am going to give a go this weekend in an attempt to re-create them. My only real dilemma is how much peach jam to put in. I think I'm going to start with a 1/4 cup to 5 lbs pork, and see where that takes me.

I know the odds are long that someone has tried this, but anyone?

Assuming the results are not disastrous, I'll post progress picks here.

I picked up a bag of the Serrano ones a few months ago at some gas station on a ride home from MS.  Unfortunately, I left them at a buddies house for a NFL playoff gathering and didn't try them.  Can't help you, but will follow your experiment.  I really like some jalapeno and cheddar ones I bought from a local butcher.

Dukes products are fantastic. Tho I haven't tried that yet.

I will be keeping an eye on this. Duke's is one of the very few brands that I consistently enjoy.

Yes I have bought them straight from dukes when they offer the bag for $5. No I have never tried to copy them. I really like them.

I ended up making a really good peach sausage that doesn't taste a whole lot like dukes. They are very good, but there is a major difference. After comparing the two, I think it may be molasses. The dukes are way darker and it took me a few bites to figure it out. Then molasses hit me. I may try again at some point, but I'm glad I came up with this. The test fry was amazing as hot sausage, so I may use it for that purpose in the future.

5 pound pork
1 tsp pink salt
3 tbs salt
1/2 tsp black pepper
1/2 tsp white pepper
1 tsp chile powder
1 tsp garlic salt
2 tsp accent
1/2 tsp chipotle
1 tsp sugar
1 tsp cayenne
1/2 tsp paprika
1/2 cup water
1 tsp brown sugar
1/2 tsp tomato powder
1/2 tsp malt vinegar powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp tarragon
1/8 tsp nutmeg
9 oz bottle peach jam





The dukes is far right with mine next to it. I wish I had slightly smaller casings like theirs as well. Theirs is also much drier. I like the more moist meat, but the drier they are the more edible the casing seems to be.

Thanks. The opening between the lid hinges just so happens to be the exact same size as the width of one of my garage fridges. They go straight from the fridge to the grill. Pretty handy.

Why?  Just tell folks on PH to come on over here and see the post.  We won't bite. 8)  But since you could easily pm him this message on either forum, I am curious as to why you felt the need to state it so publicly?

Yes. That is accurate. If it's a new recipe, I usually will just put a little disc in a pan to check for salt, seasonings , etc. You can also tell a bit about texture as well. Whether it's over or under mixed by slicing it after the fry.
