Good job!  Yours looks better than mine.  Looks like you got the meat sliced thinner, or did you flatten it some?  I think I will do that next time so I get a better roll like yours.

The flank steak was already pretty thin to start with. It was tough to butterfly. I did not flatten it more.

I put it on a grate that was on top of a foil pan to catch the juice. I did not get a lot of juice, not nearly as much as you got. Don't know why, maybe some of it evaporated. The steak was plenty juicy though.
