Need some ideas for a dessert for a bbq lunch
« on: February 09, 2018, 02:36:40 PM »

As we  have previously mentioned, Bent and I are members of the Brandy Station VFD Auxiliary.  The Aux raises money (usually over $40,000 per year) to support our community VFD.  The primary method is by cooking/catering events.

The first one of 2018 is next Friday.  An educational lunch for farmers and those in agriculture.  Menu is pretty simple -- pulled pork sandwiches, cole slaw, baked beans, drinks and desserts.  Seems like it might be a much bigger group than last year, maybe 40 or 50.

Bent is cooking all the pork and we will make the sides.  I do all the desserts.  Last year I made some homemade cakes, including a homemade carrot cake, and the cakes did not seem to go over well.  They seemed to like the homemade apple pie and a real simple version of a cheesecake pie with cherry topping.  But I am a little stumped.

Any suggestions on what you men seem to prefer for desserts after pulled pork lunch ?  Lemon meringue pie? Key lime pie?  Bread pudding?  Peach cobbler?  Banana pudding? Just more apple pie? Input is welcomed as I don't want wasted desserts and unhappy clients.

Why not try that pie that you were thinking about for competitions?  Was it an orange?

I don’t know why but pretzel salad is always a big hit at all our events.  I know it says salad, but I consider it a desert.

to be a contrarian and for ease I'd go with banana pudding.    But I'm not much of a dessert guy myself.

When I eat buffet at the Moonlite in Owensboro, I usually get the banana pudding. It seems there's always room in my stomach for that...

I second the motion for bread pudding, more specifically, banana with raisins and pecans. Soak the raisins in rum and roast the pecans. :lick:

No bread pudding for me but if you don't stay out of the way when I see a cobbler there's a great chance for a collision.

Thanks for all the input.  Based on what folks were saying in this thread, I decided to go with a peach crisp, an apple crisp and a banana pudding -- all homemade (boy peeling 20 apples was not fun!).  I make a crisp instead of a cobbler because it is a little easier for me, but most folks don't know the difference.  Hopefully the clients will feel they have enough variety and like the selection.

If you decide to do banana bread pudding, Martha Stewart has a good recipe on line. When I make it, which is quite often, I make a few changes: Mash instead of slicing the bananas, increase the amount of raisins to 2/3 cup and soak them in rum, insert 2/3 cup roasted pecans and add a pinch of cinnamon.   :lick:
