Survey for Best Pork Shoulder--Bone in? or Bone out?

Which way is best for pulled pork.  I have been told that bone in helps retain moisture etc.  What is the guru's opinion?

Not a guru; but to me it doesn't matter. Why pay for bone when ya can't eat it?

I like bone in, the meat is easier to handle. When they remove the bone, you end up with lots of floppy meat that makes it harder to inject/season and move around.  :2cents:

Bone in is cheaper but what is the cost/lb after cooked and bone pulled out?

I think bone in cheaper per pound.  Those cooks last week, 3 Blade bones after cooking...all 3 together only weighed 1.1lbs.  But some will say advantage, others not so much.  The bone in is going to have all the "garbage" around the bone, I do not know what this stuff is, but if you have ever had to clean a cooked butt you know what I am talking about, I think all that can easily be a pound.  Now some say that adds to the flavor...All I know is them Costco don't have all that gunk and they are pristine!  I would venture to guess it is less then $2 TOTAL difference either way!

And if the flopping boneless butt is not your thing just roll it up in a frogmat and tie it with butchers twine!

seems like the boneless may be easier to use for sausage grinding if they are cleaned up already and dont have to hassle with cutting out the bone etc

I tend to do bone in but I haven't really found any difference.

I have only done bone-in, but they are a Pita using a rotisserie.  I am thinking real hard of getting a boneless one from Costco to try out.  I have string to tie the floppy parts.
