Who here cooks with charcoal, wood or gas...?

I use my MAK for 95% of my outdoor cooking. I use my Weber kettle for steaks, but I will be trying out my MAK sear grates during my next steak cook. I do not have a gas grill, but I do have 2 Blackstone griddles (36” and 17”). They get used quite often (pancakes, quick searing, smash burgers, fajita type cooks, cheese steak sandwiches, grilled sandwiches, etc).

Just curious to hear if you guys have other types of cookers...if you do, what are they, and why do you sometimes (or always) choose them over your pellet grill for certain things...and what are those things?

I charcoal on my Weber kettle and smoke on my Yoder, ohh and direct grill after smoking on my Yoder.

Love to get a Blackstone someday.

I cook with gas when I'm using my griddle, when it's small items (a couple of pieces of salmon), when I don't think the items will benefit from smoke or charcoal flavor (roasting peppers) or when the time is short.

I grill over charcoal with a Weber kettle and I smoke some items over charcoal in my barrel when I think it imparts a better flavor.

I use all three. Wood in my vertical smoker, charcoal in the BGE and gas for the Charbroil inferred. My current outdoor utilization goes like this: Traeger 40%, DC 30%, Charbroil 15 %, BGE 10% and vertical smoker 5%. Before pellets it was: Charbroil 45%, BGE 35% and vertical smoker 20%.

I stay proficient in Charcoal in case of an issue during Competitions and proficient in gas grills for competitions at WFC

I see that your 17" Blackstone griddle uses the small green propane canister for fuel.  About how long do they last?  My main interest would be using high heat for searing, smash burgers, hibachi, cheesesteaks, and whatever else my cardiologist detests.

Yep, about 2 hours.

I found this setup to be much more convenient:

I have the griddle sitting right next to my MAK on a 24x24" stainless table from Costco.  I bought the adapter hose and now have it hooked to a 20lb propane tank that sits on the bottom shelf of the stainless table.  Very clean setup and works VERY well when doing reverse sears.  It's so easy to have it screaming hot and just move the meat to it for a few minutes of searing action vs jacking the temp on the MAK and waiting/burning more pellets then needed.  Also makes outdoor breakfast cooks easy-peasy.

Cook on all three.  My primary is Pellet followed by gas than charcoal depending on what I’m cooking and how I feel that day.

Today 100% pellet.  That will change once it warms up and I can use my Camp Chef grill/griddle that is propane.  Not sure what the shift will end up as I certainly can't make similar tasting BBQ on the propane unit, but will probably be making more griddle type foods.  Frequency TBD.

I do majority on pellet, but I do almost all of my steaks either on charcoal or sous vide finished on gasser - though the best steaks I've ever done were sous vide then seared on charcoal. I've only done that once since it just seems wasteful to burn a bunch of coals for a couple min sear. That time was prime strips for Christmas dinner, so I splurged.

Other than that, pretty much never use charcoal and only use gas when I think I'm in a really big hurry and cooking something quick and simple.

I'd really like a pellet grill that sears well so I could get down to just a pellet grill and one charcoal and be happy. I just haven't found that pellet grill in what I'm willing to spend yet.

Wonder if the Camp Chef Woodwind w/ sear station would meet your need?

Have you tried Grillgrates?  It may be a cheap alternative to semi-searing on your pellet grill.
