Just curious... I believe the Memphis Elite (Pro too) accepts two grates in the middle upper position (not talking about the very top position).  With both middle grates in place and the top grate removed, wondering how much headroom there is... in other words, would you be able to place 8 lb butts or whole packer briskets on there without hitting the top of the cooking chamber?

Yes you would.

The issue is that the space between the main grate and the 2nd shelf is not as tall as I would like.  I have found it not to be an issue, as grates touching meat is no big deal in a cook like a pork butt or brisket, but very rarely will you find a bone in butt that will be shorter then the space between the main and 2nd shelf! 

I will keep looking for a photo that shows what I am talking about!

Looks like you can get away with just one middle grate (placing butts on just it) and then line the main grate out front a bit... where there would be no grate interference?

You can add the 2nd second shelf and do 8.  The only thing that happens is one of the shelves sits on 2 of the butts.  But when you are going to shred a meat, it does not matter if it had grill indentations in it!

Never thought about setting the grate on top of the meat instead of on its side holders.  You may be able to get 9-12 pork butts on the Elite doing it that way.  You may be able to get 5 packers on there.  I don't see you getting 8.

This spacing of the racks and the headroom are an area where I like my MAK better than the Memphis.  I think you could get 8 pork butts on the MAK with the upper grates.

This is the right side of the grill.  You can see how two fit on the shelf so you could fit two on the left side.  I put them on frozen during that particular cook and they were still stuck together.

I made 8 on my Traeger XL one time.  Like you usually no more than 4 and most of the time just 2.

When I said 8 I meant butts, and the Elite could hold a lot more.  2 Briskets on a Pro.
