Precisely cut burnt ends

I have a 270 smoker so I see videos and things that they post on various outlets. I have no real reason to be this particular when making burnt ends, but they invented this little jig to get exactly the same size burnt ends. It's pretty slick.

I looked at the 270 smokers at Mason Dixon BBQ, and really liked them. I still sometimes think I would like to have one for some reason.

Do you like it and how do they work.

I like it alot. I have the discontinued sumo model. Pretty nice amount of cooking space for a very small footprint. I figured out pretty early that I didn't like the water aspect, so I just keep 3 full size firebricks in a foil pan on the heat diverter. Because of the insulation, it takes about 45 minutes to get to temp. It will sit forever at whatever temp you want. I've had it going for 12 hours before pretty much without touching it. Still had probably 30% of the charcoal left after the long cook.

Is this really necessary for the competition circuit?  I guess that's why I'm just a backyard hack.  All I saw was a bunch of wasted bark and meat.

Wouldn't say it's necessary, but would help with consistency and presentation for sure. I agree with you on the waste, but I assume the cutoff and trim are being used in some fashion. Sandwich, beans, quesadilla, etc.

I have judged many boxes with burnt ends and not once did I ever note if they were the same size or not.  Like chicken, the "mirror imagine rule" is a myth that too many teams believe in and I don't think most judges ever clue into. But just one more thing that someone who probably teaches classes has to add to the class presentation so folks think they are getting some inside info when paying big bucks for a class.

I always like to cut my burnt ends from various parts of the point that seemed to be marbled the way I like.  I was never as concerned with consistency as much as what was going to taste the best...but after my last showing with Brisket at a competition...I don't have a lot to talk about!

I think the 270 team (husband and wife) seem to make their living mostly by selling to comp teams. They are on the road constantly, and do many comps. I think he devised this mainly for nailing down the timing of cooking. If they are the same size, they will cook more evenly and at roughly the same pace.

I don't know the guy at all, but he seems to have a little mad scientist in him. To my knowledge they don't do classes, but they are trying to sell them and their smokers. So yes, I see your point as to the sales motives, but I also think he is just trying to invent useful products for a very small niche that may find them beneficial or are looking for that very narrow edge in a comp.

I'm not someone who necessarily looks through 24 thighs to find the six that look exactly the same, but obviously there are a lot of people who do. I think this product is made for those types. I personally just thought it was kind of a neat little gadget that I would most likely never purchase.

I am not against gadgets and if folks want one, then by all means, go for it.  My comments were more directed in general -- i.e. some people feel intimidated to ever try to jump into a competition because they think everything in the box must look perfect or they think they have to have a bunch of gadgets to effectively compete.  Good bbq is what has also won my top votes and that is what folks considering entering a competition should keep in the fore front of their minds.

He does put them back on after cutting. They line them up in a Weber foil pan then back in the smoker.

I wholeheartedly agree with those comments. I really assumed there was more to it before I actually signed up for my first contest on pelletheads. People do drum up a lot of reasons why their class/product etc is necessary to win. It's really just cooking some food, and making it semi presentable in a styrofoam box.

I do have alot of "stuff". If I made burnt ends more often maybe. I probably make them once a year. I think it's a nice looking box though so....
