Sauce on Pulled Pork and Ribs
« on: May 08, 2018, 12:41:00 PM »

If you sauce, do you use a different sauce for pulled pork than you put on ribs or the same sauce?

I like a thin sauce on pulled pork. I'll either make up a finishing sauce, or just mix Sweet Baby Rays roughly 50/50 with cider vinegar.

Been a while since I’ve done pulled pork, typically the sauce is the same but not always.

When we compete, I make different sauces for ribs and pulled pork.  We rarely serve at home, but when we do it is Sweet Baby Ray's thinned with apple juice and a splash of vinegar for both

I have a variety of sauces that I keep on hand for when I have guest. Due to utilization by commercial BBQ joints, most non-smokers associate BBQ sauce with pulled pork or ribs, so I don't want to disappoint. Personally, I put ketchup on French fries because I like ketchup better than potatoes. The same applies to pulled pork and ribs, why put on a sauce that overwhelms the pork flavor unless you do not like the pork.  :2cents:

I usually do not sauce either, but read in another thread someone mention a different sauce for each and it intrigued me.  If I were to use sauce, I would probably use the same on both as the are both pork.

When I sauce either, I use my homemade bourbon (catchup base) sauce.  I tend to prefer the bark mixed into pulled pork and a dry rib (dry rub only).

Pulled Pork:
9 times out of 10 when I'm eating pulled pork it's on a sandwich with coleslaw.  So for me, a thinner vinegar based sauce is ideal.  Eastern North Carolina BBQ Sauce or Lexington (NC) Style BBQ Sauce are my go-to's.  But I'm a North Carolina native and you know how people are with what they are used to.

Ribs:
I prefer a thicker sweeter sauce.  Various flavors are fine, but ideally something with the consistency of Sweet Baby Ray's.

Usually make my own sauce, and it gets used on both, the GF really likes it. If we have people over I have mine and a couple of other brands out.

Pulled Pork.  Sweet Baby Rays, Angry Orchard Cider, Vinegar, a dash of soy.  (thin and runny)
Ribs.  Sweet Baby Rays and honey.   (thick and a nice glaze)

Don't know if that's right or wrong, but it's how I do it most of the time.  Never any complaints.

I'm not much on pulled pork, but when I smoke one I use Famous Dave's Georgia Mustard or whatever I have thinned with a bit of Apple cider vinegar and yellow mustard.

I’d smack the hand that tried to put bbq sauce on my pulled pork!  A few splashes of finishing sauce is the answer.

My ribs get a home made rub and a light brushing of sweet baby rays.

Can you describe what your finishing sauce is?  I haven't done that before.

Not my creation but love it.  Also found jj’s finishing sauce but it’s a bit different.
