Wish I would have taken pics, but forgot. I make a pretty good smash Burger so rarely change up the method, but these were an awesome change of pace.

Lots of mumbo jumbo in the descripton. The short version is that the burgers are steamed in the onion vapor, and never touch the griddle (like white castle).

I know Bentley likes a good white castle burger, and this was by far the closest thing to it that I've made. It was like white castle with much better beef.

I tried these too on my flattop - kenji is great with many things but esp burgers and burger blends.

What did you think of them? I wouldn't trade them permanently for my crusty smashed burgers, but I'd definitely make them occasionally to switch things up.

You are right on Bentley/White Castle.
When cooking at a comp in Jeffersonville we took a evening for supper at White Castle.
Bentley ordered 10 of them

I am the same - I love the crusty double patty smash but these were really good and fun to try.  Harder as kids like the size but not the onion flavor :)
I found a new burger place as well here in TO that does an insanely crusty smash - talked and watched the owner cooking and am going to give his technique a try.
He smashes and then uses his scraper to further smash/smear the edges all around so they get maximum contact with the flattop.

I like the holes in the White Castle and the onions on bottom during cooking.  But I will give this a try...The bun is the hardest part!  I guess I will get some Hawaiian Rolls.  Thanks for this!

Way to much yard work over the last 2 weeks!

I think I only got 6 down, should have stuck with just the sliders and leave the crinkle cut fries alone!

The onions are on the bottom while cooking with this method. They end up on top once it's flipped at the end.

I have now read it all the way through, was confused by the onions, but I see they are chopped and shredded.  I will have to see, but it seems like the put the cheese on way early!
