Here's how we smoke/cook our Salmon for 250 at our yacht club's yearly Memorial Day celebration.

Several years ago I took a ferry from Seattle to an Island, possibly Bainbridge, to watch a Native American cultural production while eating salmon cooked with an Alder fire in a similar fashion.  It was a nice meal and a great evening for my family.

3.5lb pork loin roast, buffalo flavored tater tots, and coleslaw.  Approximately 2hrs. @180 2hrs. @300.  All for me as the rest of the family was upta camp.  Oh, and LowSlowJoe that brisket looks perfect.

Mac and cheese on the LG
Burgers on the Memphis
Dogs on the Davey Crocket
Bush beans on side burner to the DC

I did what was probably the best pork shoulder I've ever done. Sadly, it was for some friends' race day party that my wife volunteered my services for. I only got a couple of small tastes while pulling it.

Made a brisket, but ended up smoking it on the Weber. Separated point and flat prior to smoking for burnt ends.

Follow up
Came up to Western NC from Fl for the summer Had family here and planning a small cook, prime tenderloins, and some BB Put the brown sugar on the ribs the night before in eger anticipation It had been raining here but the bottom fell out!,close to 16 inches in 24 hours Well surprise,surprise,no electricity (Memphis Pro and Cookshack CB 24) and no generator (on my list) Well,fired up the egg (not used much anymore) and the gasser(first use in 2 years, had to run the mice out)and saved the day Just reminded me of how good and convient pellet grills are
