Has been QUITE SOME TIME since I cooked a brisket. Had picked up a 4+ lb. brisket flat at Costco a while ago and thought I better get it cooked before too long. Had been in the freezer for a few months (more like 6).

Used some Memphis steak seasoning for rub (they do not sell this anymore)

Put it on the grill about 5:15 AM with the grill st at 190

Here is a shot before I put it in a pan and covered with foil. Internal in thickest part was about 165.

I put one cup of beef bouillon in the pan before covering. Bumped the temp up to 250.
Hit internal of 205 about the 12 hour mark. Here we are ready to pull.

Left it covered while I sautéed some onions, mushrooms, green pepper & sweet red pepper

Had a nice bark & smoke ring. Very tender.
Sandwiches were a bed of onions/mushrooms/peppers, two slices of brisket, melted provolone then more onions, etc
Ready to eat!
