What's your favorite food to make on the pellet smoker?
« on: June 05, 2018, 11:03:35 PM »

I know that versions of this question have been posed, but I'm new to this way of cooking and I'm looking for ideas.  I enjoy the foods I'm making with my Memphis Pro, but I honestly enjoy the cook even more.  Might be because I have three kids under three years of age and smoking/grilling is my sane time.

Anyway, so far my favorite foods have been simple salt & pepper brisket(when I've actually done it right) and pork belly(salt & pepper, smoke at 225 until tender, then cut into 1" strips and roast at 450 for 15 minutes.  Dang good.

Brisket for me as well, both standard and corned beef. Equally a favorite are spare ribs.

Everything but steak. My favorite is brisket, but pizza, banana bread, meatloaf, pretty much anything you grill or bake gets a little extra something over a wood fire. I still like the taste of steaks on charcoal better than over a pellet fire though.

Bacon.

Store bought, thick cut, cooked at 180 for hour and 15 mins or so, then 225 to crisp up for 15 mins or so.  Let rest for 5 mins.  Renders out perfectly.   I've had many a compliment of "best bacon I've ever had."

The list could go on, but bacon is the number 1.

Favorite would be pork loin, spicy brown mustard, tonka dust, 325 until 150.  :pig:

It is a toss up between bacon and jerky.

Everything tastes better to be coming out of the smoker but my favorite is Brisket.  St Louis Ribs are a close second

Tri-tip for me.  I'll do them at 150 until it gets to 137 to 140 internal temp usually with a water pan.  Sometimes I reverse sear when it gets to 130, but not often.  I haven't ruined one yet.  Key word is yet.

Ribs, brisket, steaks and burgers.  And in that order.  I make a lot of others but those are my favorites.

Don’t take me wrong, I’ve made some pretty good steaks on my pellet grills and if that’s all I had, it’s how I’d make them. My family just all thinks that charcoal steaks are a bit better.
