South African Spices
« on: June 12, 2018, 04:26:32 PM »

My daughter recently returned from a trip to South Africa with her college choir. She brought back wildebeest jerky and a bottle of meat spices. There is no ingredient list and she was not real sure what kind of meat she had while she was over there (other than it was red). I would like to smoke something using the spices this weekend. Any ideas would be appreciated. [ Invalid Attachment ]  [ Invalid Attachment ]  [ Invalid Attachment ]  [ Invalid Attachment ]

Looks like salt and peppercorns.  What does it taste like?

Salt, peppercorns and coriander seeds.  I also wonder what it tastes like.

The spices were hotter than I expected, very strong and plesent pepper taste. The wildebeest was much milder than I thought it would be and not as gamie. Probably looking at smoking some sort of beef roast with the spices.

Finally got around to using the South African spices. Ended up brushing beef ribs with molasses and coating with the rub. It had a very unique flavor that is hard to describe. It was spicy, but not burning hot. A very nice flavor. When I asked my daughter what she thought of it, she said it reminded her of what she had in Africa, so I will take that as a compliment!

They're in So. Africa and several locations in Dubai.

I'll try to find information on ordering the spice.

They didn't respond to my email inquiry.

It probably didn't reach the proper party because the only email address I could locate was for reservations.

Paul and Big Dave,

Thanks for checking on the spices. I will try the e-mail and see what happens. I am curious to find out what is in the rub. I have not used much of it, saving it for a special occasion (not sure what or when that will be). Thinking it might be good on brisket. I'll let you know what happens. Thanks again for your internet sloothing skills. I can up empty when I was looking around.

The picture of that butcher shop...Am I seeing correctly?  Meat anywhere from $80 to $130/Kg?  Sausage at $69/Kg...By the marbling it looks like Wagyu breeds...people really pay $30/lb for sausage?
