Prime rib time

I was wondering how long per pound it takes to cook a prime rib at 250° to an internal temperature of 125? I plan to sear all sides before smoking.

The one I'm going to cook is 8 lb.

This will be my first prime rib on the smoker.

I don't know if this will be of any use to you–

I suppose eight pounds is a four-rib roast.  When I roast mine at 325° and follow with a sear, that would take about an hour and 45 minutes to cook.  Then you can add whatever rest time you think is appropriate.

I don't know how to calculate the time for a lower pit temperature but I don't think you'll get into too much trouble if you figure 20 minutes per pound and start about about 45 minutes earlier.  Just wrap it in foil and towels and put it into a cooler to hold it until serving time if it finishes early.

Yay!  I found an old set of notes (for a drum smoker but the timing should be similar).

I smoked a 3-bone roast with a couple chunks of cherry wood at 225° for 4 hours to a internal temp of 122°.   Resting for an hour in foil, towel, cooler raised the internal temperature 5°.

The smoker temperature was controlled at ±1° by a Rock's Stoker.

My guess is....
Bone in for us, 425, 15 minutes per lb.
We like it rare, may or may not work for you but just “chiming in”.
Just realized I said 25 minutes earlier.

I did a 4 bone roast after searing cooked at 190 for 5 1/2 hrs to IT 145.

The most important part for me is to make sure you have some packaged ague-sauce hot on the stove before you cut into it. That way if under cooked for some folks you can dip it in it to paint it brown for them.
