Beef snack sticks

Wanting to make some of these.  I’m not sure what cuts of beef to use, whether to go fatty or lean.  Looking for suggestions of what other Pellet Fans do when they make them.

I plan to make them at some point too.  I need to go back and look at my research, but it was 80/20 meat to fat or 75/25.  Some said use beef for meat and pork fat.  I plan to use chuck roast and fat from pork shoulder.

Thanks, Bar-B-Lew, I was undecided whether to use chuck or round. I was thinking I could get an 80/20 ratio from just chuck so for the first go around that’s what I’ll try.  Won’t be this weekend, forecast is for mid 90’s and high humidity.  No way I can be out with my breathing issues.
