Cheesy Smelling Brisket

Not sure what to make of it. I just opened up a cryovac brisket and it has a Parmesan cheese Aroma to it. I know what rotted or a spoiled meat smells like but this is new to me. I think it's safe to eat but what do you guys think. I bought this brisket 3 days ago but have no idea how long the supermarket was holding on to it.

I also cut off a few pieces from a couple of different spots. Cooked it and it tastes pretty buttery and cheesy. Not spoiled not rotted but a little odd. Little help would be greatly appreciated as I do not have time to go out tomorrow and get another brisket. Thanks guys

I'd take it back.  I've trimmed the suspicious stuff from "off" appearing hung deer carcasses and packaged the venison for my own consumption, but I never ate anything that smelled "off".

I've also thrown out meat that looked okay but smelled "off" when cooking.

Do we have any FOODSAFE certified members that want to offer their thoughts?

thanks for the input.  I've done some search on line and this isnt that rare.  some say no others say that's what an aged brisket smells like.

Just wanted to get the collective input of people I trust here that may have had experience regarding wet aging etc.  I took a decent chunk of it and it tasted fine.

if I'm sick in the morning I'll toss it.  lol

Well, there is getting sick from food and then there is getting SICK from food.  Bent is more adventurous, I just won't touch off smelling food.

There's an expression I've lived by since I remember, "the nose knows."  If it smells "off," it is.  No tough decisions required.  Health trumps Inconvenience on days that end in "y's."

Have you done a search on the web.  If you do you will see that it has happen in the past and from what I can ascertain has nothing to do with wet aging.  However you will et a variety of answers.  IMO  if it was wet aged it should had stated on the wrap.  My recommendation would be to take it back to the supermarket or follow the old axion "when in doubt throw it out".

It's fine.  That's what aged beef smells like.  I get my steaks out of the clearance rack, because they get aged in the cooler.  :)  The ones that are the best tasting and most tender definitely have a noticeable funkiness to them that is like the smell you describe.

ate it and it was probably the best tasting brisket to date.  sorry fellas but I think I'll make it through this time.
