Just picked this up yesterday.  Found it on Craigslist for half price...and it has a 19-Apr-18 manufacture date!  I don't think it has had more than about 30# of pellets through it.  Did steaks last night, holy cow does that chargriller WORK!  Today I'm doing pork cracklin' followed up by a sirloin tip roast.

The good thing is you do find crazy deals like this. I was able to land my FEC-120 off Craiglist for a steal.

Definitely has the WAF.  She likes the looks of it, and the pork cracklin' that I made off of it earlier today turned out great.  Sirloin Tip roast on there now for dinner later tonight.  Seared it on the charbroiler, now low n' slow at 200* on the indirect side until I hit 130* IT.

I was surprised too, however the previous owner was certainly not in any sort of financial dire straits.  He had bought a Memphis Pro and was ready to move this one out.  I didn't ask how long it had been listed for, but sure was glad I caught it!  Been having fun with it today, the HHT certainly offers good adjustability, and combining that with the Fireboard I've got, I'm very happy with the results.  Pics of that sirloin will be up later!

How did you make the cracklins?

Thanks!  It's a bit of a process, but I get a pork belly, cut it in half (half a belly is ~5 lbs, so it's plenty) and then cube it up.  Dump them in a pot, cover with water, boil for 30 mins.  Fish out the cubes, toss in a bowl with your favorite rub, then on to the smoker.  Wife made soup with the pork stock.  Anyway, throw them on a frogmat, smoke at 225° for an hour over indirect heat.  After that, then kick the heat up to 400° to start crisping them up, cook for 30-35 mins depending on how crispy you want them.

Also did a Sirloin Tip roast today too.  Turned out great, but will probably pull at an IT of 135° next time.  I did 130° and it could have gone a bit longer.

Congrats, Great find, I also found mine on Craigslist for <$1k, but mine was a couple of years old, not basically brand new like yours!    I have watched ever since because I would buy another (or a 500) for my cabin and have never seen anything since.     All about being in the right place at the right time.
