We'll never know.  I hate that.

Maybe I'll age one for 8 or 9 days and give it a test cook.

I brine frozen turkey, even after it says it's already got a sodium solution.  That's just my thaw and brine process.  Sometimes 5 or more days.  Never had a problem.  I'm not clear on if that applies to your situation as you didn't have the turkey in liquid, but a full week thaw in brine from frozen in the fridge is fair game to me.

Yeah I wonder if this could be more susceptible to bacteria since this is a bunch of turkey pieces mashed together vs a whole turkey...

Im going to go buy two more tomorrow for this weekend.
