Homemade Sausage - First Attempt

After years of talking about it I finally bit the bullet and made some homemade sausage  :cool:

I ended up buying a Electric Meat Grinder - STX International 3 Speed Turboforce 3000 and it worked well. One thing I did realize is I'm buying a dedicated Stuffer! My son was "suppose" to help me but ......

 Looks very good so far.. The true test will be, taste..If they taste as good as they look, you have it made...Nice pics.

I used Hi Mountain Bratwurst Sausage Kit that I got from Cabela's. Since it was my first try I thought a kit would be easier to do. I must say fresh sausage taste so much better  :lick:

Now I must say I HATED the casings that came in the kit. Not sure what to expect I "assumed" they would be bundled neatly and would be easy to separate and put on the horn. This was a job all by itself. I'm going to spend extra next time and try pretubed casings.

Stuffing works well with the a grinder if you get a stuffing plate, it has just 2 kidney shaped openings and you remove the knife. If you buy a dedicated stuffer loo for one that you can attach a motor to it is great to be able to run it by foot and have both hands free.

 Good looking sausage.

Yes I have a stuffing plate with my grinder. My biggest problem was pushing the ground up meat down the grinding head/tube. Now this was my first time using the unit so I had nothing to compare it to.
