And the leftovers go very well in Chili Verde or Pozole!
Bentley, I just thinking, I gotta learn how to make chili verde.  Hopefully, there's a short version of cooking that awesome dish.  I love to BBQ, but not a big fan of big, multistep recipes.

It can be as simple or as complex as you want.  Me...some tomatillos and spices blended together to make a slurry, then chicken stock.  Roasted Anaheim & Poblano Peppers (or whatever heat chilis you are into).  Cut into large hunks and added along with pork to pan, simmer till chunks are tender.  I like my Chili Verde very thick, so I add corn starch at the end so it is about the consistency of gravy, I like it to stick to my flour tortillas...a very Gringo thing I am sure, but I eat what I like!

Bentley, that sounds awesome.  I never roasted a pepper in my life, nor have I ever bought peppers, other than bell.  I'm going to have to do some research on pepper heat, cuz the wife won't eat anything other than mild heat.

I attached my fav posole recipe here. It is really simple and can be made in any large pot. This particular version is for the electric pressure cooker. On NY Eve I will cook multiple batches in the Instant Pot and transfer them to a large cast iron pot to keep warm on the outside grill so we can sit by the firepit.

Perhaps it should go in the Instant Pot thread, but since it calls for C.S. ribs...
