A few recent cooks inspired by postings and recipes on Pelletfan.

Smoked meatloaf.  I use my moms recipe because it’s what I grew up with.  Naturally, it’s the one I like most. It’s also the simplest recipe.
- 2 lbs ground beef
- 1 medium onion
- 2 eggs
- 2 TB Worcestershire sauce
- 1/3 cup ketchup
- 1/3 cup Italian breadcrumbs
Mix and form

Smoke at 225 for 30 minutes and then 350 until proper internal temp (can’t recall).

Reverse Seared Ribeye. This one was about 1.75” thick.

Seasoned with kosher salt and black pepper. Smoked at 225 until internal temp of about 130. Then seared in a cast iron pan for about 1 minute per side.

I always love to see the classic pellet smoke ring on a meatloaf cooked that way!

A few thoughts from these experiences.

- This was my first time cooking a meatloaf on a pellet grill, or with any smoke for that matter.  I don't think I'll ever go back to the oven now.  I love it.

- However, regarding the reverse seared ribeye, I learned that I don't like a lot of smoke on my steaks.  Now, I certainly enjoyed it and got down on it like I just reemerged from a year in the wilderness, but I overdid the smoke.  I think next time I'll just kiss it with smoke and then sear.  Or maybe cook thinner steaks so the process is faster and takes on less smoke.  I'm glad I discovered this preference before I went all out on an expensive rib roast, although I could skip the 225 degree segment and go straight to the high temp roasting with that.

-  That mushroom gorgonzola sauce is really really good.  I added a sprig or two of fresh thyme but otherwise it's fantastic.  You can control the intensity by how much gorgonzola you add.  With a finer chop on the mushrooms, I may try it as a topping for beef tenderloin sliders.

I mixed some pulled chicken in that sauce and put it over top of penne pasta...delicious.

BTW, nice looking cooks.  Good thing I ate a pork shoulder sammich before I looked at them.

I am in total agreement with you on smoked meatloaf.  I was at a family members house a few months ago and they served meatloaf cooked in the oven.  I had a difficult time choking down my serving.  I did enjoy the mashed potatoes though, but I had a difficult time with that meatloaf.

My wife said it is a waist of time on my smoker.
I am still wanting MEATLOAF!

Great looking cooks Ralphie. Gotta love a smoke ring on a meatloaf. Bent, you are right. I was also one who did I not make meatloaf my first cook... and still have not cooked this way yet after a couple of years with my pit. Ralphie, you got me thinking....sometime this weekend maybe.

Yeah, I guess it is contingent on you liking meatloaf or meat loaf (which one?)...I can guarantee if someone had told me to cook salmon as my 1st cook in 2002 I would have chuckled and moved on!
