Just in Time for Thanksgiving
« on: November 18, 2018, 07:35:20 AM »

Big flock of wild Turkeys in the fields this morning. Up until this year have only seen the occasional lone bird. We have now seen several flocks this year. I wonder if it is because they planted corn this year instead of soybeans?

Has anyone ever had wild turkey?  I dont mean the getting torn down liquid!  I wonder if they are like other game and their taste is effected by diet?

I have a few times. I breast them out and only cook those. I brine for 24 hrs then Inject only with butter. Season with salt and pepper then onto the smoker. I can't tell any difference with them vs store bought. The ones around here are around corn and soy bean fields.

Yes, When I was in Northern California we had Wild Turkeys on the Base, Those that were eating Acorns had a sour taste to the meat and those that roosted closer to open grassland were very good.

Has anyone ever had wild turkey?  I dont mean the getting torn down liquid!  I wonder if they are like other game and their taste is effected by diet?

They are just dinosaurs!  They were planted by the Nebraska Game and Fish department because they're a native species (as opposed to pheasants).  Now they're everywhere in Nebraska, including well into the city limits.  They destroy the upland game populations by eating the eggs and chicks.  You should run over, or by any method, kill every wild turkey you see.  Me and my hunting partners harvest as many as legal.  On city birds you can do it with a 9-iron.  Wild birds easily call to decoys during the strut.   Don't leave the carcasses lying in the fields.  It'll cause the coyotes to breed extra litters.

Now...to the question of taste.  We only eat the breasts which are not nearly as large (or as tasty) as domestic birds.  I think the best way is diced and cooked stroganoff-like over rice or noodles.

Bentley, get a scoped .22 rimfire and thin that flock—they've been breeding like crazy!

Ditto here in MN.  Up in northern MN where I grew up they are really taking over and the grouse population is down.  Never had any when I was a kid growing up. They breed like rats and rabbits.

I have had it a few times in MS and wasn't a big fan, but I didn't cook it either so I don't know exactly how it was made.  It was dry which may have been caused by the cook.

Well, both Birds for tomorrow are cooked, sliced and vac sealed!  In the sous vide in the morning, and no more worries about when the bird is done, or is it ready!  I like this style of Thanksgiving!
