Will get the Memphis Pro to 650° just cuz it has been awhile.  Sear the beef (a small 31oz.), and then turn down to 350° and finish.  It usually takes about 25-30 total time to hit 135°.  A bit high for pulling off the pit, but my Uncles are more Medium guys now days then med rare, so we will accommodate them.

Some mashed potatoes and candied carrots and I think Kristin is providing some coconut shrimp and Parker House rolls!  Poor Ole uncles have been in Marco Island for the last 20 years during winter...we try and get them through their 1st Winter back here since then!  Cold and dreary today!

Looks tasty. Costco has pre-seasoned tri-tips that I was thinking about serving to guest next week, anyone ever try their pre-seasoned version?

Not from Costco, but I have only ever made the peppercorn seasoned one's from Sam's and I loved them

Yes!  About 1pm.

Have not had Costco pre-seasoned, they have zero tri-tip of any kind around us, but the Kirkland Tri-tip in CA is tremendous...

What did you season it with - Montreal?

If the Kirkland was preseasoned, then I think you've had the Costco preseasoned Tri-Tip.  Kirkland is Costco's store brand.

I was not clear, I have never had pre-seasoned Tri-tip from Costco, just their normal Tri-tip and it is very good!  I think Kirkland brand beef is all they sell in the meat department.  Which I really have no idea what that is as I do not think there is a Kirkland Meat..ie National Beef, Brawly Beef, IBP...etc.

Kirkland WA is near Seattle on the eastside of lake Washington and was the original headquarters for Costco. They adopted the name for their in house products.

I understand that also, just not sure how they source their beef.  Most places dont really care if you buy beef from them and it is National Beef, or IBP...I have no idea who sells Costco their beef.  By far the finest beef from state to state I have ever seen.  CA, NV, KS, MO, VA, NJ, NY...does not matter it is always quality and I have no idea who is rasing it!

I normally would cook this thing L&S to an IT of 100° (1.5-2 Hrs.) then sous vide @ 130° and sear. For my guest tomorrow evening I thought that I'd get them involved and just cook on the pit all the way. What temperature should I cook it at and for how long? My pit will not get to 550°, will I still need to sear it? Thanks for the advice.

Dont have to sear it, if you want get your pit as hot as it will go and do about 5 minutes on each side...I then turn down to 350° and cook to my IT of 130°.  Usually takes about 45 minutes after the sear with my 2lbers...and with a 5 minute rest comes out with a perfect medium rare for me!



I just got back from RD in Richmond with another 18lbs...so should be good with Tri-Tip till late Spring!

Thanks for the input, cooked at 350° it will probably not need a sear.
