That's a great idea Queball - I will try that next time. I was also thinking of doing sous vide to cook it perfectly, then an infrared sear, but sous vide takes time. I do shrimp that way, and they always turn out perfectly cooked.

I steam my tails for 7 minutes. What temp and time do you guys use for the smoker?
