Subplemental Smoke Generator Placement
« on: March 11, 2019, 03:52:37 PM »

My pork belly is cured and ready for smoking. I'd like to cold smoke for 4-5 hours before I do the normal 160° smoke to an IT of 140°. Where in the pit do you put the smoke generators? I'm using my Traeger Select that has no stack and its SS4 programmed  for fan only. Since the Select vents all across the back, is the generator location critical? Has anyone put the generators below the grease pan next to the heat shield?

I just try and get it as far away from the meat as possible, it will fill the chamber, so that is not an issue.
