 We did the best ever corned beef and cabbage dinner. The 4LB corned flat was sourced from our local butcher, smoked, then boiled in chicken stock and Guinness with carrots, potatoes, butter and cabbage,

all on the Memphis. The beef was so tender it trembled like jello when moved, had gaud awful good taste and texture... I ended eating more than I should have as a result.. Leftovers - We made beef

sandwiches and blended the veg' and liquid into soup. That was new to us and proved to be a good choice.

That's a fantastic idea for the leftovers! Gonna try that next time.
