You are going the sandwich route...I see!  Now I really look forward to the finish!  Mine just hit 115°, took almost 2 hours exactly at 180° controller setting.  Pro has been turned to 600°, have no idea how much meat temp will drop in the next 10-15 minutes, nor how long searing it will take to reach 135°.

I will say, I do see why people wanted temperature gauges that you can read from your phone, that was just to easy!

The Roasted Garlic bread for the sandwiches.

My Pro is heating up to 600. Will use a method Bentley told me about last night. Sear at 600 for about 10-12 minutes then turn down to 350 until internal is 130. Tho I will go a little longer, closer to 150 as my wife and I like a medium.

Ridiculous amount of carry.  15 minutes at 600° to hit 135°.  I had hoped for 145°, as most of the family does not like it as rare as me.  It has been out 7 minutes and it is 152°, so will pretty much be ruined for everyone but my brother!

At the flip after 6 minutes on the first side. Flipped and turned the pit down to 350 for another 6.
Will see what the internal reads then.

Thermometer said in the 150’s. Brought it in and let it rest for 5 minutes.
Lots of juice on the meat platter.
Sliced for hot sandwiches with French Dip

Yours looks thicker. I love beets. Good combination with the beets and mashed potatoes!

Mine was better dipped in the juice on the meat platter. Not as much flavor as I expected. Not as much as I remember from what my son in law in CA did a few years back. But he used charcoal (ooooh, a forbidden word on this sight. Hopefully I will not be banned for life).  Will try some cold tomorrow in a sandwich with horse radish, lettuce, tomato. Should be good.

What rub/seasoning did you use?  Bent puts a pretty good rub on which helps with flavour I think.

S & P, and Wee Wiley’s. Seems I put on quite a bit of WW but I think it is getting out of date. Good flavor from the seer.

Garlic bread was purchased. The brand is La Brea Bakery. I get it at the Cub grocery chain here in
MN. I have a whole wheat recipe I make from scratch. Will have to post it sometime.

WHOA. Just sliced a thin slice off the cold leftover piece.
LOTS of flavor. Maybe the bread was masking the flavor.
