That sammie looks great dk.  Love the pickled red onion, I will have to try that next time.  Was the tree falling entertainment for your buddies, or a need for wood etc?

Id be lying if I said there wasn’t a high level of entertainment value.   But the three trees we fell that day we’re used for firewood.    We estimated that this big one was about 70 or 80 years old grown on top of what would have been the initial logging road from 100 years ago.   Without an off-road vehicle this road was previously impassible.     Sadly this high quality Doug fir would have made great 2x4s but it just doesn’t pencil out for one tree.

tried again this past weekend.  18 lbs prime packer from Costco.  I wanted a smaller one like last time, but it's my baby bro's birthday so leftovers for him.

Used an electric slicer to get the chopped texture I was looking for.

I was going to chop the leftovers from the brisket I smoked last week to freeze and eat later.  But we ate it all again.

Inspired by this post, I took left over sliced brisket flat and chopped it up in a food processor, mixed in crushed red pepper, BBQ sauce, mustard and mayo. Made sandwiches with the mixture, sour dough bread and dill pickle. Tasted great, thanks for the idea.

For me it was any cheap beef chopped and sauced, and brisket usually fell in that category.
