Temp difference in pit

Hey guys, 

This is not the normal temp question/problem we have spoke about in the past.  My GMG Jim Bowie has pretty even temp left to right (within  25 degrees).

I have been noticing that depending on what, and/or how it is loaded with food it becomes uneven left to right by 100* or more.  for example I filled both shelves with chix breast (probably 30 lbs), and it was even left to right.  However when I put four 9 lb butts across the top shelf the temp difference left to right was way uneven (over 100* difference).

Why might that be?  There were no other changes.  Heat diflector was in the same spot, weather was the same, and the grill was in the same location.

maybe an issue with air circulation and exhaust

Big, moist hunks of meat in a small area change temps and air flow. They do in your oven too. Cook till they are done is all I do.  :bbq:
