Need some ideas please

A friend is having a Mexican themed birthday party and we were asked to bring some eats.
Most of the people are not fans of seafood, shrimp or otherwise is what we are being told.
It is going to be outside so it will be hot, any ideas for some easy to eat, appetizer sized preferably snack type things that will go good on a hot day with some beer, etc. ?
Other ideas are welcome as well but thought I would start there.
We don't necessarily need to use the pellet grills but would like to.

My favorite Mexican dish is pozole prepared with pulled pork, it works well for large groups :lick:

Pork burnt ends using some sort of Mexican sauce and/or marinade.

Fresh pineapple chunks, grilled and brushed VERY lightly with hot sauce

ABT's stuffed with cream cheese and pepper jack and crushed pineapple

Quesadilla's -- can be as plain as just cheese or as elaborate as you like and the cut into small wedges for serving

7 layer dip and tortilla chips

Multi-layered nachos -- refried beans, shredded cheddar, sour cream and guac

Tough Gig!  My 1st suggestion would have been Civiche, but that is out! Next would be Taquitos, but they are deep fried, out!  That leaves me with quesadillas, which will work well on the pit, and Queso dips...Sorry, most of the apps that I think of that are Mexican, are fried!

Our first thoughts were Mexican egg rolls (Fried so that won't work well), Secondly a Ceviche ( when we heard they don't do seafood, that also out), we are leaning Kristins way with the grilled pineapple we were looking for other fruits that would lend themselves nicely that way. The ABT's stuffed with pineapple was not on the radar and I hope Gwen likes the idea as well, those just sound really good.
We will let you know, Gwen is doing guacamole (she makes it awesome) but we wanted to add to it with something else others would not think of etc.
Please if you think of anything else, let us know.

I will look this up but we were kind of being asked for some appetizer type stuff, heard of it but have not ever had it or at least I don't think so. Isn't it kind of more main meal stuff?

A nice chipotle BBQ sauce with some chipotle hot sauce mixed in with it would be good.  I think I will do that with my next batch.

Pozole is a main dish, sort of like a heavy soup. Here is a link to a recipe that I use as a starting point. https://www.geniuskitchen.com/recipe/authentic-mexican-pozole-196233?c=print&rid=196233 . I substitute pulled pork for the pork roast. Chopped avocado also goes well as a garnish.

If I had time (it is this weekend) I could have tried a mix and maybe added some chorizo ?
We make and eat them for a few things every year, they just really want everyone to stick with the Mexican theme. We are kind of new to some of the folks in this group so I don't want to be the rebel just yet.

The pineapple idea kind of made me think pastor pork. You could have little pastor bites. One piece each of grilled pork, grilled onion, grilled pineapple on individual toothpicks. Maybe have a few different salsas to go with it. Never tried it, but sounds good to me.

So many ways you can go with this, but, for a hot day a good refreshing cold gazpacho would be great. Gazpacho is a cold tomato and cucumber soup.

It is easy to make. All you need is a blender or chopper of some sort. You place it in ice to give it a good chill. It is very refreshing on a hot day.
