We think we landed on marinated pork and boneless, skinless thigh meat, with some heat on a fruit skewer. If we are able to decide how to do them we will surely post photos. Thanks for your ideas.

Be careful, lean pork dries out much quicker than thighs. Thighs at 165° are very moist, lean pork, not so much. Breast are probably more compatible with lean pork, cook to IT of approximately 145-150°.

Thanks for the heads up, I am going to cook them on two different pits if we do in fact go this way.

Another option might be to fix chicken skewers and pork skewers but pull them at different IT's.

So am I understanding?  You are going to have either/both pork & chicken chunks on skewers with fruit on the skewer too?

If I can find something that would season them up good and it sounds O.K.. to the host, we were thinking of making like a chicken chunk with a pineapple chunk (Kristin got us leaning that way) or star fruit or something like that and the same for the pork chunk ones. Something like cook the meat up 2/3 of the way  and then add the fruit to finish them. Basting them as we go? This is all just winging it so frankly not sure which way to do it. We were leaning on meat on the fruit skewer thing and FMT tossed in the pork and the pastor sounds pretty good. We just want to take something they won't have and just munchie style stuff. It is going to be at the lake so wont have any indoor cooking options.

Jalapeno poppers always go over good. Fill  with cream cheese and wrap in bacon. Put em on the grill grates and they'll go quick...

Here we go. Was worn out and got lazy trimming the thighs but into the soup they went. The marinade is AWESOME, thinking it is going to be a hit.

On the grill with the chicken. Pineapple right behind it. Gonna do fresh tortilla chicken and pineapple bite roll ups with cotija cheese. Wishing that we could take a dish with shrimp etc. The marinade is outstanding.
