A method of cooking food that is normally outdoors and involves a controlled fire. From the internet: " The word “barbecue” comes from the Caribbean word “barbacoa.” Originally, a barbacoa wasn’t a way of cooking food, but the name of a wooden structure used by Taino Indians to smoke their food."

The guy across the road from us then was a teasipper and he ended up in the hospital with one ear burnt off because he poured gas from a gas can on a smoldering lit fire.  He did it twice.  Both cans blew up on him.  The second time got his ear.  I ain't real smart, but I hope I'd have learned after the first time.

We used it light the fire initially because there wasn't anything called charcoal lighter then to my knowledge.  And if there was, it cost money we didn't have.  We had bulk gas for the ranch vehicles. 

And for y'all who don't know, a teasipper is someone who went to tu.  And tu is that glorified high school in Austin.  Gig'Em! (Although yesterday was not a good day.  Didn't lose the game.  Just got outscored.)  ;D

Same to you, Sir!  And yes, I'll root for them as long as they ain't playing A&M because I'm from Texas.  My wife went to tu Tyler and I was a BQ and in the Corps, so we are a house divided even though I didn't graduate.. Class got in the way of my social life and being in the Corps most of the time.  I hope our daughter goes to a neutral school we can both be happy with.   :beer:

It’s regional. BBQ can be a noun or a verb. I’m from North Carolina and around here BBQ has always simply meant slow cooked chopped or pulled pork, a noun. And that’s it. Ribs are ribs. Chicken is chicken. Brisket is brisket and so on. But BBQ is chopped or pulled pork.

However, many of my friends from other regions consider BBQ a verb, IE; BBQing is the act of cooking BBQ (with fire), or grilling. 

Back to the nouns...for my friends from Boston, BBQ is simply synonymous with grill. For other regional friends, BBQ is synonymous with cookout.

I think in a less enlightened time (ie, the dark ages when I was a kid) not many people knew about offset smoking at home, let alone pellets or whatnot.  Having a cookout with the family and friends/neighbors was all there really was, so the name barbecue was applied both to the activity and to the resulting meat (usually hamburgers & hot dogs).  All that was done over charcoal for the most part. The popularity of gas came a bit later.

I think it was about 30-40 years ago that I remember people starting to make a distinction between BBQ and "Grilling", the latter being over either charcoal or gas with direct heat.  BBQ was low-and-slow cooking, indirect heat, and considered an advanced technique.  About the same time, grilling anything other than steaks or the previously mentioned hamburgers and hot dogs started being more popular. Grilling was the "low fat way" to cook your meat and (a new emphasis) veggies.

What do *I* consider BBQ? I would say cooking over a grate, as compared to wet braising in a dutch oven or cooking on flattop/frying in a pan. So for me, that steak over the charcoals in your Weber is still BBQ. It's all a bit muddled though--wrapping your brisket in foil for a Texas crutch is essentially braising. Does it matter? No. Is it good eating? YUP!  :lick:

BBQ means how I cook dinner every night. It started many years ago when our oven broke and I cooked dinner for a year on a Weber Cooker.

Back then it was hard to get off work to meet a repairman. While that was out of necessity, now I just cook most meals, with the exception of breakfast, on a BBQ (though I have been cooking my wife's omelets this week with tritip from the smoker).

If someone comes over for dinner they will get BBQ because that is what there is, along with pizza from my wood fire pizza over attachment.
