I've spent an afternoon sharpening a set of OLD HICKOREY kitchen knives
I feel it did a good job

good enough for me to be told not to sharpen my in-laws knives
they could be dangerous if they are too sharp

I'm usually cooking on a Traeger BBQ124, Traeger JR BBQ055 (SOLD), Traeger Texas BBQ075 (Father in laws), or a couple of SawTooth grills at my church

That's crazy, a dull knife is a dangerous knife. A sharp knife will move and behave as expected.

This. Sharp knives are safer, because there is less need to force the blade into the material, and there is usually more "respect" for the blade when you know it is very sharp.
