Pimento cheese comes to mind.

Or

Make a Cuban. Mustard, ham, pickle, jalapeno, cheese.

I like pickles, pickled vegetables and onions.  Anything you would put on a banh me sandwich would work.

Edit....  mustard is a must for me.  From yellow to home made course grain beer mustard.

So that I am on the same page...no changes to the existing PP, just something additional to put on it?

No coleslaw this time. In fact I have decided to go with sautés mushrooms, roasted peppers, greek peperoncinis topped with a red onion and diced spicy pickle   I will know how it taste in about 4 hours i am now going to take it of the grill and let it rest for 4 hours

I was going to suggest something similar to Pepper Stout pulled beef but using pork instead.  Sounds like something similar to what you came up with.  I think the peppers and onions will be great.  As much as I love mushrooms with beef, for some reason, I am not sure I would like with pork but have never tried it either.  Looking forward to pics of your results.

Never was much for anything else on a PP sandwich but the Pork and BBQ sauce.  Like others have mentioned, maybe treat it like a McRib and go pickles and onions...

Never tried it, but this got me to thinking -- warm sauerkraut?  I love the vinegar with pork.  Or kimchi if you like that?
