A Proper Dinner...

We don't do a lot of "traditional" cooking any more.  So we decide tonight we would like a proper dinner.  Meatloaf, acorn squash and rustic potatoes.  Never draped a meatloaf in bacon.  Slicer blew a fuse so I had to hand cut it, way to thick for my taste.  Will see how it does in protecting the loaf.  I am afraid it is not going to get the crust I like, but who knows.

My brother made a bacon covered one in his pellet grill and said it is a definite recipe to keep in the rotation.  He used bacon he had cured and smoked also.  I have bacon curing now and plan on trying one soon.  It's my first attempt at bacon.

45 minutes in at 350°.  About 95° IT, turned MP to 325°.

Brown sugar and butter in the squash?  I am thinking need to try this one.

Yes and a shake of salt.  Can also add a bit of maple syrup if so inclined.  I love acorn squash.

I would not do the bacon wrap again just because I don't like the way it effects the crust of the meatloaf, but it was one fine meal!

And we all know what is coming later after the meatloaf cools in the fridge...

Oh man, that meatloaf looks really good. I love a meatloaf sandwich on white bread. Getting closer to liking squash but the herbed potatoes....Yep.

I'll take it as a cool crisp lettuce wrap. Looks really good, even though I am not a bacon fan.

 Nice looking cook.  For a moment I thought it was my pit. I do squash almost the same way.  Maple syrup and raisins, then mix it together.  A classic fall cook for sure.

Looks delicious! Never tried acorn squash, will have to get one and bake it on the grill!
