What do you think?

I am thinking of doing a Beef Wellington, but instead of using Tenderloin, replacing it with a Rib-eye Petite Roast.  Anyone have any experience with this or see any inherent issues using this replacement?

Have never done one but don't see why not.  The recipe I looked at on-line looks like A LOT OF WORK but also looks absolutely fabulous!
If you do the cook you will need to do a blow-by-blow account.

I bet it will be just fine.
My Mom used to go to a restaurant and order this in the Bay area, I never had it there but always made sure and steal some of the leftovers, it was fantastic, even cold.

Will get a Rib Roast next time I am in Costco, half it, trim it and we will give it a go for Christmas Eve dinner!

Being the nice guy that I am I would be willing to come to dinner and let you know how your experiment came out.    By the way I am absolutely sure it would be excellent, but every time I think of making one i get cold feet for fear i will screw it up.  so like others have said i would also be interested in a step by step tutorial

Trying to decide if I want to go traditional or sous vide.  We are not fond of the texture of beef when it is cooked sous vide, so that concerns me a bit.

Cant find goose liver any where in Mayberry.  Online, ridiculous.  $24 for 6 oz.  I guess they abuse the goose to make it, and even I need to be cognizant of that.  Dont mind ya killing animals, but abusing them to get there is no longer in my repertoire!

So, will try super doctored chicken live substitute, but don't hold much hope out for that!

What is the liver for? I could not imagine rying to find it around where I live either. May be able to find turkey liver.

What I consider "traditional" Beef Wellington calls for fores gras and mushrooms on top of the beef encased in the puff pastry...

For sake of discussion and probably on a new thread why is it so horrible.  We force feed cattle, hogs and chickens to get to market quicker and cheaper so I just don't see why we can't grow large livers.

From what I've read, that's exactly what they do. Supposedly, it does not cause the bird any pain and the birds don't particularly mind it, they don't have gag reflexes like humans do.  :2cents:

We do this with the geese, not beef, swine and fowl too the best of my knowledge!
