Any different ideas for leftover meatloaf??

After Bentley's meatloaf post I decided to make one. Used mealoaf mix from a butcher i go to when I am close to them. They said it is 60/40 chuck and pork. I have used it before with great results, 3 pounds added in a couple of eggs a handful of onions and a packet of ConYeager meatloaf mix with a cup of cold water. Mixed it and left it in the bowl overnight and then stole Bentley's bowl molding method, it fit nicely on a 1/4 sheet pan.

Now I have about half of it left, and looking for different ideas than just sandwiches. Thinking of cubing it and using it in place of meatballs for spaghetti.

Anything else out there that is quick and simple?

Heat it up in a skillet to brown each side after sauteing some peppers, onions, and mushrooms.  Place it on a garlic bread bun and melt your favorite cheese over the top of it.

Or, how would it work out cubed into meatloaf burnt ends?

You could crumble and add to macaroni and cheese.

There used to be a restaurant near us that made a killer blackened meatloaf. I've never made it but I found a few recipes on the web.  Basically, sprinkle meatloaf slices with blackening seasoning and cook in hot skillet.

Ditka's in Chicago when it was open had a menu item name Grandma's Meatloaf - mashed potatoes on the bottom, meatloaf on top of that with BBQ sauce, and then stack of onion rings piled high on top of the meatloaf.  It was about 8+ inches high when it came out on the plate.

Convert it to meat sauce, chili, burritos, tacos or cook with beans if your just trying to find a use.  Portion and freeze for the days you just don't feel like cooking.

slice it and serve with as breakfast meat with either poached or fried eggs.

Quite a few nice ideas. I really like a few of them but the GF is very picky, and there is no way she would do some of them. I think I will leave her look at these and she can decide.

I had also thought about slicing it about 1/2" and laying it out on a sheet pan  with some BBQ or pizza sauce, into the oven to heat up then put some cheese and onions and peppers on it and brown that under the broiler . she doesn't do mushrooms.

So out of all the ideas she wasn't to excited about them, she liked the spaghetti one. Si I cubed it up 8oz box of rotini some water a nd jar of sauce in the instant pot and in 30 minutes with getting to temp and the pressure coming out she was happy with it. She did say the garlic bread may be one to try next time.

Is there anything better than cold meatloaf sammies? We go for hot sliced when fresh and then sammies for lunch. Yum.

My whole life it’s been meatloaf and mashed potatoes on the first night. Then cubed and dropped into sauce for spaghetti and “meatballs” the second night.
However, my moms meatloaf recipe closely resembles typical Italian meatballs. I make the same recipe most of the time.

I did the spaghetti thing and she liked that, I hate to throw food out if I can use it, she is more of an I ate that I don't want leftovers. She usually take for lunch the next day and then I either have to eat it or do something creative with it to use it up.
